Warm Roasted Pepper Salad with Smoked Sardine Fillets

This salad is a delicious and healthy option, perfect for a light meal or as a side dish. The combination of roasted peppers and smoked sardines is a delight for the palate.

Preparation time: 25 minutes

(For 2 servings).

2 peppers (red or yellow).

4 smoked sardine fillets.

2 cloves of garlic.

2 tablespoons of extra virgin olive oil (AOVE).

1 tablespoon of balsamic vinegar.

  1. Roast the peppers:
    Place the peppers on a baking tray with a little water and a pinch of salt.
    Roast in the preheated oven at 200°C for 10 minutes on one side, then another 10 minutes on the other side.

  2. Prepare the peppers:
    Once roasted, peel the peppers and cut them into strips.
    In a pan, sauté the chopped garlic with a little AOVE. If you want a spicy kick, add a chili pepper.
    Add the pepper strips to the pan, sprinkle with a pinch of salt, and sauté everything together for just a couple of minutes.

  3. Assemble the salad:
    Serve the warm peppers over the smoked sardine fillets.
    Drizzle with a splash of balsamic vinegar before serving.
