Tortilla Roll with Anchovy and Mojama

This tortilla roll with anchovy and mojama is a delicious and easy option for an appetizer or brunch. The combination of the soft omelette with the saltiness of the anchovy and mojama creates an irresistible dish.

Preparation time: 20 minutes

4 round bread rolls.
4 eggs.
4 anchovies in olive oil.
12 slices of mojama in extra virgin olive oil.
Extra virgin olive oil (to taste).

  1. Prepare the bread rolls:
    Slice the round bread rolls in half and toast them in the air fryer at 200°C for 5 minutes or until golden and crispy.

  2. Cook the omelette:
    Heat a drizzle of oil in a frying pan.
    Once the oil is hot, pour in a beaten egg.
    Fold the sides of the omelette inward, place an anchovy in the center, and then fold it in half, forming a square.
    Repeat this process with the remaining eggs.

  3. Assemble the dish:
    Place the omelette on the toasted bread rolls.
    Add the slices of mojama on top of each roll.

  4. Serve and enjoy:
    Serve immediately and enjoy this delicious combination.
