(For 2 servings).
2 slices of whole grain bread.
1 tomato.
4 slices of marinated cod.
A handful of pine nuts.
For the guacamole:
1 avocado.
A piece of sweet onion.
Lemon (to taste).
Tabasco sauce (optional).
Salt and extra virgin olive oil (AOVE).

  1. Prepare the guacamole:
    Scoop out the avocado pulp and place it in a bowl. Add the lemon juice and mash with a fork until you get a creamy texture.
    Finely chop the sweet onion and add it to the avocado. Season with a pinch of salt and, if you want a spicy kick, add a few drops of Tabasco sauce. Drizzle with some extra virgin olive oil (AOVE) and mix well.

  2. Prepare the accompaniments:
    Toast the whole grain bread slices until they are golden and crispy.
    Peel and chop the tomato into cubes.
    Lightly toast the pine nuts in a pan with a few drops of AOVE, just until they are golden.

  3. Assemble the toast:
    Spread a generous layer of guacamole over each toasted bread slice.
    Top with the tomato cubes and place the marinated cod slices on top.
    Sprinkle the toasted pine nuts over the toast to add a crunchy touch.
